Avocado Tuna Salad Sandwich

½ large ripe avocado
1 can (7.5 ounce) Island Trollers Tuna, undrained
¼ cup chopped green onion
4 slices sandwich bread
lettuce leaves

  • Step 1. Place the avocado in a medium-size mixing bowl, and mash with a fork. Add the tuna (breaking up any large chunks), and green onion. Mix together until well combined. Season with salt and pepper if desired (I didn’t think it needed extra seasoning).
  • Next step is, Spoon tuna salad onto bread, topping with lettuce and tomato, and finishing with bread, making 2 sandwiches.
