And now, Turn on the Saute function on your Instant Pot, add 1 tbsp avocado oil and allow Instant Pot to warm up. Season oxtail with 1 tsp salt and 1/2 tsp pepper. In two batches, cook oxtail until it is brown on both sides. Once browned, remove from Instant Pot and set aside in a bowl.
And then, Add the remaining 1 tbsp of avocado oil to the Instant Pot and add onion, celery, carrot, garlic, fennel seeds, juniper, cinnamon, chili flakes, black pepper and salt. Saute for 2 minutes, or until onion is translucent. Stir in tomato paste and cook for 1 minute. By now, there should be crispy bits on the bottom of the pan, add tomatoes and balsamic vinegar to deglaze or loosen the crispy bits from the bottom of the pan.
