4 Egg Whites, Medium
100 g Icing Sugar, or Powdered Sugar
100 g Caster Sugar, or Superfine Sugar
1/4 tsp Cream of Tartar
1/4 tsp Peppermint Extract
And so on.

  • First of all. Preheat the oven to 90C/ 194F. Line two baking sheets with baking parchment.
  • Step two, Place the egg whites in a large bowl and using a hand whisk, whisk until the egg white start to stiffen, about 3 minutes. Alternatively, you can use a stand mixer with the balloon whisk attachment.
  • Step three, Continue whisking the egg whites, gradually adding the caster sugar and icing sugar, a tablespoon at a time, until all the sugar is combined into the egg whites.
