Gluten-Free Lemon Crinkle Cookies

2 cups Honeyville blanched almond flour
1 cup sugar
Zest of 1 lemon
Pinch of salt
2 large egg whites, room temperature
And so on.

  • First. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • After that, In a medium mixing bowl, combine almond flour, sugar, salt and lemon zest. Set aside.
  • And then, In a separate bowl (or in your standing mixer), beat egg whites until soft peaks form.
